I am currently a level 7 human mage and a noob, so i don’t really know what to get into, and how do you "undo" a profession because i picked blacksmith, but i want to change

Get Tailoring first, you’ll need to make some up-to-date gears for yourself as you level. Pick up Mining just for making a big profit. When you hit 70, you should have a lot of gold you made by doing mining. Get rid of mining and pick up enchanting, a mage needs a lot of spell powers, and enchanting helps big time.
Blacksmithing is for Warriors and Paladins, maybe Hunters. You only wear Cloths so Tailoring is a must have profession. Also you can unlearn your professions by clicking the "cancel" icon appears on the right side.
For end-game purposes, get tailoring and enchanting. At level70, you can make your own gear with Tailoring, and enchant it + Sell your enchants for a fair bit.
To unlearn a profession, go to your Skills pane, scroll down to Blacksmithing, click on it, then click on the icon shaped like a circle with a line through it.
My mage is Tailoring / Skinning (for boots & bags) and at high lvl leather sells decently.
Many mages are Tailoring / Enchanting so they can make decent gear & at high lvls make money on enchants. The lvl 70 arc/fire tailoring set is quite nice.

You can unlearn tradeskills, but not any other type of skill. To unlearn a tradeskill, click the appropriate icon next to the skill name in your character’s Skills tab. You can relearn the initial profession if you wish, but your skill level in that profession will be reset to zero.
