hit the key k to open up your skills tab, then find mining and there should be a circle with a / through it, click that, and then click that you are sure.. done.
On your Skills page next to the bar for each MAIN skill there is a small button for unlearing them. Its best to pick somthing your going to use, and to have a combining harvest/crafting skill. <mining/smithing, skinning/leatherworking, etc.> If you do get bored with it, focus on quests or make another character, especlily if u have a high lvl skill, for once you unlearn it u have to re-train from zero.
