You want your 2 skills to match up. Like skinning is for leatherworking. Mining is for engineering or blacksmith. Herb is for alchemy or inscription. Skinning is easiest and cheapest to level up and leatherworked equipment goes for good cash. I use herb and inscription which generates a lot of money but is expensive to lvl. Also your gunna use leather armor for 40 lvls so might as well be able to make your own.

I have found that mining and skinning are best for all of my characters. Stacks of ore and skins sell well and you have the gold for anything you will need for your hunter.

It depends on your goals for the game. If you want to make money through the auction house, then a gathering profession — a combo of two of mining, skinning or herbalism — is what will suit you best. I personally found that for my Night Elf hunter, skinning and leatherworking were ideal UNTIL she reached level 40 and could wear mail. Then I dropped leatherworking and took up herbalism. It was a pain for awhile because I had to go back to all the low-level places to gather herbs, but once I leveled up enough I was able to make lots of money with the combo.
The profession question is a tough one as there are so many possibilities and combinations. There are no really /wrong/ choices, just ones that are inconvenient early in the game (jewelcrafting, for example, would suit a toon of at least level 40 in my opinion, just because of the cost and difficulty of gathering materials).

My 80 hunter (bronzebeard) – Skinning / Leatherworking , even though leatherworking I think becomes pointless for hunter past level 40
