tailoring and enchanting are usually used together. because they both don’t need anything from other professions.

Enchanting and Tailoring can be paired in any way.
Quite a few players will use Enchanting and Jewelcrafting (for the PvP edge). Others will do Enchanting and Blacksmithing, for the same reasons. But seeing how Blizzard gave most professions a decent, self only, item/buff you can pair things in a lot of ways.

Well, towards tailoring and enchanting, they can be paired up with each other pretty well. But it alos depends on what class your character is. Most warriors choose blacksmithing + mining or engineering + mining.
Most rogues take mining + blacksmithing or skinning + leathworking.
It depends on what class mainly, as well as your devotion to the time you’re willing to take to each thing. The main time consuming thing is the gathering part. I have 300 skinning, but only 145/225 leathwroking because the beasts never give me the right leather.

Herbalism: Alchemy/Inscription, or rarely Enchanting
Skinning: Leatherworking
Mining: Blacksmithing/Engineering
Herbalism gives you the spell where you can heal yourselve
Skinning increases your crit
Minig increases your stamina
Each Proffesion has its benefits in the gear/buffs/or special things
Alchemy: special trinklets increasing heal and mana gained, and also increased duration of elixers
Enchanting: gear, and gold of disenchantment gear
Leatherworking: gear and easy epics to start off
Tailoring: gear and specail threads
Inscription: dont know much about, sorry
Engineering: Really nice goggles…very nice ones, extra toys that help in combat, and well, who doesnt want a motorcycle…good gear you can make off this that only engineers can make
Blacksmithing: makes either weapons, gear, or other stuff that could help a lot, and only BS can use
It really depends on what class you roll, tho, unless you want to make money, go with the gathering proffs
