Mining = more Hp, atm at 450 mining u gain +50 stam…its getting buffed next patch as well. Mining also makes you some money if you know how to work the Ah and if you have a gd server economy.
. Be warned, Jc costs a lot to level, but well worth it in the end 
Jewelcrafting = On my server this makes a ton of cash. I can make up to 600g a day from this because red gems sell for loads. 19 spell power gems and 16 str gems sell roughly for 100g each, and through mining u can prospect everything you get and hopely alot of red gems
It depends on what you want to do. If you just want to make money, take two gathering professions. I’d suggest Herbalism and Skinning, but Mining and Skinning works too.
If you want to make your own gear, you ought to do Mining and Blacksmithing. Personally, my DK has Herbalism and Inscription, and I make some money but I have other characters who have Blacksmithing and everything.
Blacksmithing,Jewelcrafting, and inscription make some good amounts of money.Jewelcrafting makes good money but sometimes drives me nuts looking for mats to level it up.Now its at 450 and i make 400g in a couple hours.Blacksmithing is good for making gear and weapons.Inscription is good.I have a toon that make 1500g a day.You could be a mat collector.Skinning,Mining,and herbalism get some good mats. Blacksmithing/mining herbalism/alchemy Jewelcrafting/mining inscription/herbalism leatherworking/skinning engineering/mining tailoring/skinning. Hope i helped
Blacksmithing and Jewlcrafting. Blacksmithing because it will help you get better armor and weapons such as plate armor. Jewl crafting because it will make you a ton of money.
