Any of the gathering professions are good for gathering money. Herbalism and Mining are generally the easiest, though skinning’s good if you hunt a lot of critters. Herbalism’s a bit more consistant, but skinning and mining can make some "burst money."
Alchemy is very useful overall – everybody uses consumables.
Engineering is good for PvP. Also good for hunters/rogues, to get the raid-saving jumper cables.
Leatherworking has some uses, but not too many patterns are that great. Blacksmithing (and its specialties) are typically the realm of the warriors, especially armorsmithing.
Enchanting takes a lot of initial cost, and a large upkeep (to get materials.) However, the end-game enchantments can go for several hundred each, so it’s got a good payoff.
Jewelcrafting, with the expansion, is probably going to be useable for everyone, though it might favor casters a bit.

Depends. Do you just want money making skills or do you want something that can be usefull to you? In the end it’s about preference
Money making
Rogue: skinning, mining (then can sneak anywhere to mine and the can make solo trips to the Black Forge once they have learned to smelt Dark Iron)
Shaman: skinning, herbalism
Druid: skinning, mining
Hunter: skinning, tailoring
Usefull – any of the professions can be usefull if you have the right combination such as
Leatherworking and Skinning
