Depends on your class and what you want out of it really.
I think JCing and mining are a fairly decent choice, just because everyone uses gems, and you can get so many designs from rep rewards and drops, where as there’s almost nothing for the other crafting professions.
If you’re a clothie I usually go tailoring and enchanting, seeing as cloth is a drop rather than something you need a gathering profession to get, and enchanting means you can make a lot from DEing items you’ve made to level tailoring, and drops you can’t use, as well as selling enchants.
