Mining and herbalism are best, although you need to switch between trackers since you can’t track them both at once. Skinning is completely viable as well and you can make a ton of money there too.
Check the AH and see what’s selling for the most: herbs, bars, or skins. Then take those two.
Enchanting can be very profitable if you sell your dusts and shards.
My toon is an herbalist, then I use that good money i earn to get mats to level my enchanting. I know On Silvermoon Server, Mining and Herbalism stuff sells good.
