As highly as I recommend people take at least one gathering profession, for cloth-wearers I am a big fan of Tailoring/Enchanting. This is because you will be able to gather materials for Tailoring very easily (any humanoid mob), and the tailored items that you make simply to skill up, or ones that won’t sell well, you can disenchant, and turn them into enchanting supplies. Tailoring supports Enchanting, and both of them support a Holy Priest well.
You will, in higher level enchanting, be able to give yourself special +healing ring enchants, and be able to enchant your own weapons and gear without the hassle of finding an enchanter, haggling over rates, and trying to decide upon a fair tip.
It’s a very good combo for a Holy Priest, and the good news is, if you ever decide to go Disc or Shadow, you can make different pieces and still have a good set of gear.

The best that i have found is Enchanting/Tailoring.. pretty much make your own healing gear! if not that and you want to make some good money at 70 go mining/tailoring.. works well

For any cloth wearer Tailoring is never a bad choice, although the gear is not as good for priests as it is for Warlocks or Mages, but you can make yourself some good pieces, as well as the ever important bags. If you choose tailoring, then pick enchanting as the secondary as you can do both of these alone and they don’t really require a secondary one to gather the materials. Mining and Jewelcrafting is also a good combination for priest to put together some armor as well as the gems you can make.
Secondary is of course not really needed, as you can take all 3, and the most important one is probably Cooking. As a Priest you don’t really need First-Aid as much as many of the other classes, and fishing is ok, but you can buy the materials of it for Cooking for a fairly reasonable price in the Auction House. Cooking gives you the buffs including spirit and int and all those stats you need to be a good healer.
